Wheat-Oats-Peanut Cookies
A healthy whole wheat and oats cookie with chunks of crushed peanuts and jaggery is always a welcome snack. It is my mom’s favourite cookie.
Ingredients:
- Whole wheat flour 100 gm
- Oats 50 gm
- Thick jaggery syrup 3 tbsp or as required
- Baking powder 1/4 tsp
- Salt a pinch
- Butter 50 gm
- Crushed roasted peanuts 100 gm
Method:
- Cream the butter and jaggery syrup well. Add the dry ingredients and mix gently.
- Refrigerate the dough for 10-15 minutes.
- Shape as desired and place them on a tray lined with parchment paper and bake in a preheated oven at 160 degree Celsius for 18-20 minutes.
- Remove from the oven and cool them on a wire rack.
- Store them in airtight containers.
Hi Pradeepaji.. can we substitute the jaggery syrup withsugar? And in what quantity?
Yes you can use sugar. Around 75 grams
Hey pradeepa, I tried these and my friends loved it. I used 3 tbsp of powdered jaggery. Next time I will add little more jaggery, also had to add 4 tbsp milk as the mixture was not coming together.

Sure you can
Just dissolve jaggery in 1-2 tbsp water n melt it and simmer it. Strain and use
