Spicy Onion Bread
An attempt to make a small loaf with the rich flavours of spring onion and garlic. Made this in my small pullman loaf tin with the lid on while baking. Such breads taste good when it is fresh, hence it is preferred to make small batches of such loaves. The amount and choice of spices and seasonings can be altered as per your preference. Italian herbs like oregano, parsley and thyme or rosemary can be used too. This can be made with full whole wheat flour too. Or one can use a combination of maida, wwf and semolina too.
Ingredients:
- Whole wheat flour 140 gm
- Apf 60 gm
- Salt as required
- Sugar 1 tsp
- Instant yeast 1/4 tsp
- Spring onion 3-4
- Garlic cloves 3-4
- Chilly flakes 1 tsp
- Chia seeds 1 tsp
- Sesame 1 tsp
- Lukewarm water 1/2 cup plus 1-2 tbsp
- Olive oil 1 tbsp
Method:
- Mix both the flours, salt, yeast and sugar together.
- Add lukewarm water and oil to the above mixture and combine.
- Knead into a soft, smooth and elastic dough using stretch and fold method for 10-12 minutes.
- Place the dough in a lightly oiled bowl and cover the bowl with a cling wrap or clean shower cap in a dry and warm place.
- Allow the dough to double in size. This might take 1 hour or more.
- Chop the spring onions, both the green and the bulb and the garlic cloves finely and keep aside.
- Gently deflate the dough and remove the air bubbles.
- Knead the dough for 2 more minutes. Add the finely chopped spring onions, chopped garlic cloves, chilly flakes, sesame seeds and some chia seeds.
- Roll it into a rectangle and roll it tightly like a log and place in an oiled small bread tin (I have used a 7 by 3 by 2.75 inches tin) with seam side down.
- Sprinkle some more chilly flakes, sesame and chia seeds on top and allow it to almost double in size.
- Bake in a preheated oven at 180 degree celsius. Remove the lid after first 20 minutes and bake again for 10 minutes.
- Apply butter on top and bake at 200 degree celsius for 4-5 minutes till the crust is golden in colour.
- Remove from the oven, apply some more butter on the crust and allow it to cool on a wire rack.
- Cool for atleast 2 hours before you slice. Enjoy.
