Garlic Bread
Garlic bread is one of the most easiest form of bread to bake at home. And I am sure it is loved by one and all. This was one of my earliest baked bread and since then I would have baked it umpteen number of times. You just can’t go wrong with this one. Please do try it at home.
Ingredients:
- Wheat flour 125 gm (1 cup)
- Maida 25-30 gm (1/4 cup)
- Sugar 1/2 tsp
- Salt as required
- Instant yeast 1/4 tsp
- Lukewarm water plus milk 100ml
- Olive oil 1-2 tbsp
- Chili flakes as required
- Oregano as required
- Butter 2-3 tbsp
- Grated Cheese 1-2 tbsp (optional)
- Chopped coriander leaves 1-2 tbsp
- Chopped parsley leaves 1-2 tbsp
Method:
To make garlic butter:
- Heat the butter till it melts or simply microwave it and add crushed garlic and a pinch of salt ( skip if you r using salted butter), a spoon of finely chopped parsley or coriander leaves and mix well. You can add some red chilli flakes and oregano too.
To make the bread dough:
- Mix all the dry ingredients including yeast very well. Make a soft smooth and pliable dough using the milk and water mixture and oil.
- Knead for 10-12 minutes just like any bread dough. Keep the kneaded dough in an oiled bowl covered with cling film for an hour or more till it doubles in size. The time varies according to weather and amount of yeast used.
- Gently punch the dough to knock out the gases and knead gently for a minute or so.
- Take the dough and roll it like a chapati of say 8-10 inches in diameter.
- Spread some garlic butter on it evenly and add chili flakes, oregano and some shredded cheese if you like.
- Fold it in the shape of letter “D”.
- Take a baking tray and line it with parchment paper. Sprinkle some cornmeal or rava, oregano and chili flakes on the parchment paper.
- Make small slits on the top of the bread with a sharp knife or pizza cutter and brush it again with some garlic butter.
- Sprinkle some more oregano and chili flakes.
- Keep it aside for 25-30 minutes for the second proofing.
- Meanwhile bake your oven at 180 degree Celsius for atleast 10 minutes. Bake the bread for 20 -25 minutes or till u see a nice golden crust.
- Apply butter and serve hot with a cheesy dip or tomato sauce.
Notes:
- You can make this bread with 100% whole wheat flour. Or you may some fine semolina or chirotti rava to make the dough. This gives a nice nutty flavour to the bread.
- Do not roll the dough very thin. Use atleast 200 gm of dough to make one bread.
- Refer Chutneys ‘n’ Dips for the cheesy dip.

Hi Pradeepa, I always use active dry yeast. Can you please let me know if it will be 1/4 tsp as instant yeast or proportions should vary?
You can use 1/2 tsp
I tried this one. Turned out really well. Even though wheat flour is used, it was very tasty like maida bread. Thanks for sharing. Will try other breads too. If I want to make for early morning what do you suggest? Should I bake them previous night or keep the dough in fridge then thaw, proof & bake in the morning?
If it’s a loaf bread, bake the previous night since u need to cool it really well before slicing. Others refrigerate after first rise then do as u said. BTW thanks for trying out the recipe

yes u can. refrigerate after 1st proof and then thaw n shape n proof n bake
can we use refined oil instead of olive oil

Hi, I was trying the bread n kept it for the first rest but it won’t raised even after two hours… so I kept it in kitchen as it is n will do it tomorrow morning.. hope it will come out well..
Also I added the instant yeast in the dough directly. Hope it’s the right way?
Is ur yeast good enough? I mean have u activated it n tested whether it rises? U can add instant yeast directly. But if u are not sure how good it is, it is better to activate it first with sugar and lukewarm water and keep it for 10-15 minutes till it is frothy

Just tried this garlic bread recipe after putting it off for so long and I failed. :/.
Firstly the yeast did not exactly froth.
Then the dough did not quite double in size
The bread did not brown even after 20mins.(I made it with 100% all purpose flour)
I’m so heartbroken. :'(

Hi. If the yeast won’t froth, the dough won’t rise and nothing will go right. Buy a good yeast. Preferably gloripan instant yeast. Then try
What if we don’t use yeast? Is there any substitute or we may totally ignore? Thanks alot.
Following my above question, I am OK with keeping the dough overnight and kneading more.. if we can avoid yeast.

Just press the ends tightly so that it doesn’t open up. Learn about sourdough breads which uses natural yeast from our environment. And then make garlic bread avoiding store bought yeast.
How will the bread rise Sukriti without yeast?
Hi, personally I don’t have any experience in bread making.. I am beginner in baking. I heard somewhere that we should not use yeast n sometime I won’t get it easily near by my place.

I have been following your posts on Home baker’s guild and just love your recipes.
Tried out Garlic bread…..came out well….and everybody at home loved it too….
couple of points :-
– When I fold the dough in the shape of D….maybe i did not seal it well….it opened up when I baked it…
– also could you let me know how much garlic to add…
– i think salt proportion went wrong…was less …please share approx…salt propostion…

Hi thanks a lot. Yes you have to deal well or else it will open up. Garlic amount is purely your choice. Same with salt. If u feel it was not sufficient this time add more next time. Good luck
Can i use dry yeast in place of instant yeast and keep the dough whole night? Is it ok
You mean active dry yeast? Yes you can. But activate it first with lukewarm water n sugar till it is frothy. If you keep the whole night then use very little yeast

Yes you can. Milk makes the bread more softer.
After trying your garlic bread, actually I have fallen in love with it and sometimes with pizza base I just make one for myself😀👌👍

Wht will be the receipe if we use only whole wheat flour??? I mean the proportions…
Rest everything same. Just see how much liquid proportion is needed.

My 1 tsp is the standard 1 teaspoon 🙂

It depends on what you are measuring. 1 TSP sugar weight will be different than 1 TSP baking powder.
