Cheese Burst Pizza
A slight variation of the normal pizza. This simply melts in the mouth and is full of flavours. For more details on shaping this, you can refer to you tube videos. I have added some pictures for quick reference.
Ingredients:
For the base:
- Whole wheat flour 90-100 gm (3/4 cup)
- Maida 30-35 gm (1/4 cup)
- Semolina/chirotti rava 2 tbsp
- Salt to taste
- Sugar 1 tsp
- Instant yeast 1/4 tsp
- Chilli flakes 1/4 tsp
- Oregano as required
- Olive oil 1-2 tbsp
- Milk plus lukewarm water ~ 100 ml
For the topping:
- Mozarella/cheddar cheese 125-150 gm
- Onion 1 small
- Tomato 1 small
- Bell pepper few pieces
- Paneer cubes 1 tbsp (optional)
- Mushroom few slices (optional)
- Boiled corn few kernels
- Black and green olives 5-6
- Jalapenos to taste
- Oregano as required
- Chilli flakes 1 tsp
- Pepper powder to taste
Method:
Pizza sauce :
- Saute 2-3 finely chopped garlic, 1/2 of an onion and half a cup of tomato puree.
- Add little sugar, salt, chilli flakes, oregano and 1 tablespoon of tomato sauce.
- Cook well till it thickens. Pizza sauce is ready.
For the pizza base:
- Mix all the dry ingredients including the instant yeast. Make a soft smooth and pliable dough using the milk and water mixture and oil.
- Knead for 10-12 minutes just like any bread dough. Keep the kneaded dough in an oiled bowl covered with cling film for an hour or more till it doubles in size.
- Gently punch the dough to knock out the gases and knead gently for a minute or so.
- The dough for making the pizza base is ready.
To make a thick crust pizza:
- Take the dough and roll it into a thick roti/disc of around 1/4 to 1/3 inch thickness and place it on a pizza pan or on a parchment paper.
- Prick the rolled dough uniformly with fork.
- Sprinkle cheese in a circular pattern on the edge of the roti, leaving an inch from the circumference.
- Fold the dough from the circumference onto the cheese layer and press well. Make cuts at an interval of 1-1.5 inches all along the edge.
- Twist these at an angle. Apply pizza sauce in the interior of the rolled disc.
- Sprinkle paneer, veggies of your choice (onion, mushroom, capsicum, olives, jalapenos, tomato etc ).
- Spread grated cheese, oregano and chilli flakes on top. Keep aside for 20-25 minutes.
- Bake at 180 degree celsius for 20-5 minutes in a preheated oven or till the cheese melts. For details see you tube videos.
- Remove from oven and transfer onto a wire rack. Cut into wedges and dig into these yummy melt in the mouth cheesy pizza.
